It is a refreshingly dry sake, which is rare for Eiko-Fuji.
The back of the bottle shows that it is fire-aged and has a rice polishing ratio of 80%.
However, there is no sense of cloying taste, and the straight rice is just right.
Like the title of the wind blade, it goes through quickly and has a great sharpness.
It matches well with the tender and voluptuous flavor of anglerfish.
It would also go well with fatty tuna or saikyo-yaki.
But if it is Eiko-Fuji, I like the usual one.
