The next sake I chose from a selection of about 30 different cups was Kozutsuru's Yamahai.
It is often seen in Hyogo Prefecture, but this is the first time to drink it👍.
As it is labeled as a natural lactobacillus fermented sake, it was a little astringent and hard at first, but later the umami and sweetness spread out.
I am also interested in the pink label Junmai Ginjo 💡.
