In the early Showa era, "Tajima-Kogyo" was improved by selecting pure strains of the excellent sake rice "Kogyo" in Hyogo prefecture. It is a Junmai Daiginjo brewed in the extremely cold brewery in Hida, using only the revived rice grown in Taka-cho under contract. In order to keep the sake as free of miscellaneous flavors as possible, the unrefined must is placed in a sake bag and hung from the ceiling, with no pressure applied, and only the fine parts that drip naturally are collected. The Romero Special is a wrestling technique known as the "suspended ceiling hold". It was named after the technique of hanging the opponent's body as if he were lying down and leaving a strong impression, which is very similar to the technique of "Fukurozuri" (hanging in a bag) used to make sake for the sake competition.
