Kochi Food Trip - Full Kochi Trip (3) Continuing with the tasting, we listened to the commentary and explanation by Mr. Kazuho Takagi, Toshi, the brewery's head brewer. This is a rare opportunity, so I asked questions as I drank. I asked him if there was any sake that caught his attention, and rather than focusing on the taste, I asked him which sake was from a brewery that he was good friends with. The first one that came out was Akitora by Arimitsu Shuzo. It seems they were the same sake brewer at Tomekawa's event. This sake was also popular and one of the brands was sold out, but it arrived while we were tasting it. Around noon, Ms. Yuzuru Arimitsu, the daughter of the brewer of Arimitsu Sake Brewery (5th generation apprentice?), also came to the event. came and replenished the sold-out sake. Akitora Junmai A standard junmai sake. It has the acidity and umami typical of junmai sake. In my opinion, I felt the acidity was too strong. Akitora Summer Jungin The acidity is low and the taste is a little refreshing. The toji-san is an expert on wine and other sakes, so he said he has a lot of experience in making other types of sakes. Uchu no Shinkai no Uchu Junmai Daiginjo This sake is made with Uchu no Shinkai yeast. The aroma is a bit banana-like, and the taste is delicious, with a mild acidity, umami, and sweetness. AKITORA CEL-24 Very nice aroma, gorgeous sweetness and umami. I like it very much. Yoo-san had the cutest smile 😍.
