I went on a short trip to Nagano and Gunma over the weekend. I found Ding, which is not usually available in my neighborhood, and bought it. ☺️ I only know about Ding from SNS information, and the owner told me about his connection with Kentsu Takagi and his commitment to sake brewing, which made me look forward to it even more.
The rice flavor is strong, but not too heavy. The taste itself has some sweetness, but the aroma is more fruity, and the fragrance gives the impression of sweetness.
It is clear and has no cloying taste, giving the impression of a legitimately delicious sake.
Some say it tastes similar to Jyushiyo Honmaru. I have not had enough to compare it to Jyushidai, but I found it genuinely delicious in its legitimate, yet very fruity modern aspect 😊.
