The sake that got me hooked on sake swamp Is it the flavor of rice? Or should I say the aroma of koji? It has a deep, umami flavor. Some people find it to have a tangy taste. It is neither too sweet nor too spicy, and the acidity is good, so I prefer it cold or at room temperature. There are two types of rice polished to 80 and 90, but both are delicious! It does not taste fruity.
