Sogen seems to have several Hiyoroshi sake varieties, depending on the rice used for making the sake. Among them, Hachitan-Nishiki is said to be the lighter one. Since they have been serving lighter ones recently, this one is still quite a punch 😃.
I don't know about Sogen's information after the heavy rain, but I heard that many places in Suzu City are out of water again.
I'm worried because it's probably around the time when the new sake production is about to start.
