To commemorate being featured in dancyu! So I woke her up and compared it with the one I drank last year, which had been lying unopened in the fridge for about 8 months.
It's still a bit fizzy, but the acidity is less like a slash and more like a rounding. It has a sweet astringency that reminds me of blue citrus or grapefruit peel. The distinctive woody aroma has settled down and is no longer noticeable.
Anyway, the overall impression is that it has settled down. I guess everything becomes rounder when you get older. Oh, I wrote such a comment somewhere before.
