Shinshu Kamerei is a well-known sake.
The sake is brewed with different rice depending on the season, and the taste is also completely different, which is why it is so intriguing. The aroma is gorgeous and tasty, but the slight acidity seems to throw it off balance.
I prefer the Yamae-Nishiki sake rice.
