After two years of sake brewing under Tajima Toji, the 6th generation brewer named the sake "Jikin",
After two years of brewing under the Tajima Touji, the 6th generation brewer named the sake "Jikin".
The word "Jikin" means "now" in Japanese,
The word "Ji-Kon" means "to live the present moment to the fullest, without being bound by the past or the future.
We cannot change the "past" that has passed, and we do not know what will happen in the "future.
However, there are times when we can change and understand. It is "now," this moment.
