Sake made with Koshihikari rice More acidic and less fruity than the pink brilliant. It is like a white wine in mouthfeel. The acidity comes in the aftertaste and is comparable to that of No. 6 (laugh). It seems they use citric acid in the yeast. That's why the acidity is so strong.
