This is the first Koei Chrysanthemum of the season. The store advised me to wait about three days after opening it to let the flavor develop.
So, here we are on the first day. Indeed, the impression is tight and dry. The aroma is slightly muscat. The sweetness is slightly more pronounced than the acidity. Toward the end, the umami flavor arrives.
Five days later...
I don't remember the first day, but the sweetness has increased. I also feel that bitterness has been added, and the complexity has increased. As it approaches room temperature and the gas is released, the acidity mysteriously increases. I think I like it because it has a citrusy feeling, like Koei chrysanthemum when it first came out.
I was satisfied with this year's first bottle. The alcohol content changes every year, but it is getting higher and higher, so I personally wish they would reduce the alcohol content to 13 or even 12 degrees.
