AKABU Junmai Ginjo Sake Mirai
This sake is made from a sake rice called Sake Mirai developed by the Jyushiyo Takagi Sake Brewery. It is a valuable sake rice that can only be used by sake breweries approved by Takagi Shuzo. This year we drank Eiko Fuji and Hanayu Sake Mirai. I would like to try Houou Mita, Isshaku Suisei, and 寫楽's Sake Mirai.
AKABU's Sake Mirai has a subtle sweet aroma with a beautiful rice flavor. The spiciness that follows is sharp and clean. It is different from Eikoufuji and Hana Yuu, and the acidity and dryness are typical of AKABU.
AKABU is hard to find in Ibaraki, and since there are not many stores that carry it and I can only buy it when I visit Tokyo, it is more difficult to find than 寫楽, Hana Yuu, or Hana Yokuyo in my opinion.
In that sense, it is a valuable sake because you never know when you will be able to buy it again.
