At the first sip, the acidity hits you hard. It spreads in the mouth and you can feel the umami behind it.
The aroma is also faintly amino acid-like.
After opening the bottle and leaving it in the refrigerator for a day, the acidity settled down and it became mellow.
It was an interesting sake.
