The 73 in "wakagusa 73" is the ratio of rice polished for the premium rice. However, it is said to be flat polished rice, so it must be cleaner than the usual 73%.
Now, let's taste it.
The aroma is fresh young grass and rice flavor.
On the palate, it has a sourness like that of grass in August, and a slightly bitter sweetness. If I were to describe the color, it would be green. It is neither the fresh green of new leaves nor the dark green of the big leaves of Basho (Japanese banana), but the vigorous green of summer weeds. The bitterness is delayed for a moment, followed gradually by umami.
By the way, synesthesia is the phenomenon of perceiving color in tastes and colors in sounds, but I don't have synesthesia at all. I don't have synesthesia at all. I just associate it with the aroma.
I associate it with the grasslands in the last scene of "The Wind Rises" in Ghibli. The green is strong and full of life, and there are bitter things lying around your feet.
