Probably my first doburoku.
Cacao nibs, cacao powder, and vanilla beans are used as secondary ingredients in a two-stage brewing process with high-temperature white rice malt.
The aroma is vanilla chocolate with a hint of sourness.
The taste is different from what it looks like, but the sourness from the white koji is strong and the taste is rather refreshing.
I was expecting a sweeter taste with the sweetness of the rice and the vanilla chocolate, but on the contrary, the bitterness of the gori sake and the bitterness of the cocoa harmonized to create a bitter aftertaste.
A doburoku with a complex and deep flavor that is both a name and a dessert for adults.
