Oosawawa Junmai Ginjyo Nama Genjyo.
One year after the fire at the end of last year, Furuya Sake Brewery released this Osawa Wawa in collaboration with Osawa Sake Brewery in order to rebuild the brewery. The last time we had this sake was brewed with Aizan, which survived the fire, but this time it is brewed with Miyamanishiki from Nagano Prefecture.
It has a gorgeous heady aroma with strawberry and muscat nuances, and a fresh, chili-like flavor that can only be achieved with nama-shu.
The mild sweetness and umami, along with a refreshing acidity, are refreshingly followed by a citrus-like nuanced bitterness.
This is a bottle that shows signs of a steady revival.
