My brother-in-law caught some tuna and delivered it to me...he wanted it to mature for about 4 days...I've heard of aging in sushi restaurants...I've never done that before...I'm sweating!
Anyway... today is day 4 of my wife's research on the internet to deal with the aging process... a little apprehensive, but now it's time to taste it...

The acidity is milder and the flavor is up from the first day... and it went well with AKABU...
Thanks to my brother-in-law... hopefully we'll be able to catch another one...
But then again... aging is a wonderful thing...
