I actually visited Shirafuji Sake Brewery last year.
I bought everyone's favorite Shirakiku's unfiltered, unpasteurized sake for the first time: ✌️
There is just a little bit of lees involved, and the top aroma is peachy 🍑.
It has a fleeting sweetness and a mellow umami, which turns into a spicy finish.
I like this kind of sake quality too 😋.
The alcohol content is a little high for a draft sake, but as a food sake, it goes well with meat, fish, or anything else👍.
Even as a cold sake, as it slowly rises in temperature, it becomes juicier, and that's just as good!
