This is a comment from an amateur sake lover.
Today I opened a bottle of Shinmasa that had been stored in the fridge and had not been drunk for almost 2 years.
I have had other Niimasa, but this is the first time for me. At first it seemed sweet, but gradually the taste settled down and the thickness of the raw yeast production and the fresh, slightly carbonated taste of the sake spread to the palate, making it an appealing sake that makes you want to drink more and more.
I feel happy to be able to enjoy another delicious sake today. I worked hard on the snacks!
