My first Tenmei, my first Akebono sake. I bought it at Iseya Kimishima Shoten in Fukushima on my way back from a trip to Miyagi. There was a friendly and kind lady owner.
Full, fruity aroma. Melon and apples come to the fore, with a hint of banana. In the mouth, sweetness precedes the taste, but the moderate acidity is sharp and does not make the taste sweet. There is a hint of umami and no bitterness. There is almost no lingering aroma in the aftertaste, and it wears off without a hitch. The alcohol content is moderate and easy to drink, making it a good choice for those who want to enjoy sake from now on. It is not suitable for a mealtime drink, but rather for toasting or the first half of a meal. It is best paired with salads and sour tomatoes.
The description states that the rice is milled to 65%, the alcohol content is 11.5%, it is a four-stage brewing process, and the rice is sake brewing grade rice.
