I think my favorite sake from Kyoto is Sawaya Matsumo or Jyuseki. Jyuseki is my favorite and gives me a sense of calmness and peacefulness. As the days get hotter and hotter, it is time to enjoy the last sake I brought back from Kyoto!
The aroma is of fresh apples. The aroma is of refreshing apples, which attracts beginners and experts alike. The water is a different type of silky soft water from Aomori. It is a smooth brewing water without the unique sweetness and viscosity of the Aomori water. The fresh and spectacular sweetness and acidity of apples and Japanese pears that come out of this water. The person I drank it with said it was "festive. When you swallow it with the lingering aftertaste, you will notice a dry, lingering sensation in your throat, and here you will notice the sharpness for the first time.
It has been a long time since I have had a sake that has felt so comfortable in my body. I have had many bottles of Towashi, but this quality and satisfaction is in the Hall of Fame. Thank you again for this evening!
