High sugar content!
Sweet like the dark coarse part of honey.
The acidity goes up with the pure ceramic, Fuji, and tin, but the sweetness wins out so I don't mind.
This could be a good dessert.

It goes well with dishes that use ponzu!
The sweetness takes a back seat and the dish stands out...
