I was told by the owner that it was a peculiar sake with a distinct taste, and that it would be interesting! I thought it sounded interesting and bought it. This sake is made from edible rice, Sasanishiki.
It has a mature aroma. It has a mild mouthfeel with sourness and bitterness. When cold, the bitterness is strong and peculiar. When the temperature is raised a little, it becomes mellow. Basically, the bitterness is strong. Many people may not like it.
