The third glass was a gem from the Toko brewery in Yamagata. The shop recommended a heated sake, but we had it at room temperature. It is a clean, dry junmai-shu. Its light mouthfeel is balanced by the calmness that comes from moderate aging. I'm also interested in heating sake.
