It has a mellow, mild, yet unctuous flavor. It may be a bit reserved for Hiroshima sake, but the balance of umami, richness, and spiciness is a perfect match.
I drink this sake every time I come to Hidazo, and I think it is the sake that goes best with sashimi at this restaurant.
