This sake is from Fukui City, Fukui Prefecture.
The Togo district is a farming village in the eastern part of Fukui City, on the way from central Fukui City toward Ichijodani.
In the vicinity are sake breweries such as Hakudakesen and Maibijin.
From the hiney aroma, a firm sweetness and a fresh pungency with a slightly bitter taste rise up. This sharp pungency cuts through the sweetness cleanly. The contrast between the robust flavor and the crisp, beautiful aftertaste is good.
How about when it is heated up?
The firm pungency becomes lighter and the grape-like sweetness is activated.
The pungent taste becomes a little richer, and then the sweetness is wrapped around the pungent taste, and finally it finishes with a bitter taste.
This firm sharpness is really good, as it keeps you from getting tired of drinking it!
