720ml only set Alcohol 16% Raw material rice 100% Yamadaho from Hyogo Prefecture Polishing ratio 40% Sake degree 0 Acidity 1.8 Amino acidity 1.0 Following yesterday's Watashu No. 2, we will do Yamadaho for the last contribution this year. The amount is the same as yesterday's Watanabune No. 2. This one also did not have the usual carbonation of Tazake, and like Watashu No. 2, I did not feel the acidity as much as I did for the value. There is some dryness from the rice, but the umami and sweetness of the rice are well balanced and mixed together and it finishes well. 👍️ For the past few years, this Tasake has been all about carbonation, but it hasn't won any gold medals at competitions in recent years. ‼️ In fact, it might have been better to quit using carbonation. ‼️ As for Tasake, we are planning to focus on junmai ginjo in 2024.
