There is a sense of gas. It is close to a modern, beautiful sake, but the fact that it has a strong umami and bitterness gives it a sense of wanting to be served with snacks. There is a green apple-like aftertaste, but it disappears quickly, so it is easy to match with food. Today, we paired it with a sea cucumber we received from a relative in Yamaguchi, which was cooked in ponzu (Japanese citrus juice) and kobo (a type of fish sauce), and it was delicious! It was delicious!
