This is another unknown brewery in Kochi with a sales volume of about 300 koku.
I wonder if they have been replaced by a new brewer, Mr. Kazuho Takagi (6th generation) from Mr. Naoyuki Takagi (5th generation).
The Junmai Ginjo Shiboritate Nama Shuzake version is a refreshingly sweet and acidic sake.
It has a refreshing sweet and sour taste, with a little bit of sake. A little bitterness at the end.
Ito wo okashi Junmai Ginjo Activated light nigori
Active light nigori with CEL-24 yeast.
The aroma is fruity and gorgeous. The overall impression was that it would be sweeter, but at the end, it was surprisingly dry with a hint of sweetness and bitterness.
It was originally supposed to be made with Kochi yeast, but CEL-24 yeast arrived by mistake. That's why the name "Itookashi" was chosen.
It was also different from the image of Kochi sake.
