The 9th Japanese Sake Festival @ Osaka Bay Tower
There were many very new participating sake breweries to discover!
I entered 10 minutes before the event started and had a preview of the event, and was given a very detailed explanation by Go-no Honor!
All Junmai Daiginjo sake made from Koshihikari rice!
Since the rice is used for food, the milling ratio of the rice is about the same to remove any unwanted flavors.
Unfiltered raw sake
It is a light and cool sake, and the flavor comes out well as the temperature rises, but the dry, crisp taste gives way to a softer, tighter texture.
Kasumiyama
It is deeper than ↑, but still cool and refreshing.
Nama Hashiroshi
It has transparency, hard and dry, but deep and rich.
The deliciousness seems to follow it.
Kurogane
It has a very bitter-sweet richness.
The sense of ripeness is great from the first aroma.
The ripe taste is cool and soft.
Sudoh Honke is the oldest sake brewer in Japan, founded in the Heian period.
Minamoto no Yoritomo may have drunk this sake.
When you think about it, this is a very dangerous sake brewery!
