Kitajima Sake Brewery has many unique labels, and we found one that is perfect for warming sake in winter.
There was a Mutsuki ver (Senbon-Nishiki, 88% polished rice ratio, 15% ALC, 24.01%) with the same [heated toad], but I selected and purchased the 70% Omachi.
First, it was served cold (room temperature).
It is a clear and dry sake with a slight sourness in the mouth and a bitter taste when rolling around in the mouth!
Next, we had it hot (kamikan or hot sake).
The acidity disappeared and the bitterness softened, making the sake even more refreshing and dry.
