I got it as a souvenir from Tsushima 🤗.
It felt more like a junmai sake than an old sake.
The hulled graininess, the straw, the overpowering brown sugar-like sweetness, the maturity reminiscent of tamari soy sauce or miso barrels, and the slightly tangy aroma and spreading umami that they all have in common... The richness of the original sake flavor makes me feel relaxed.
Although it is 17% alu, I looked forward to having a few cups in a boar's mouth as an after-dinner drink every day.
It seems that "Kawachi Shuzo Gomei Kaisha" has changed its company name to "Hakutake Shuzo Kaisha" as of October 1, 2023.
