When I happened to peek at Bono Sagamiono, it came to the business trip sale from the brewery.
I heard a lot of talk and bought this one.
The aroma is of ripe pineapple, with a strong lactic acidity and astringency from the yeast. There is also an elegant molasses sweetness.
When the temperature rises, the aroma is reminiscent of green grass and rice paddies.
On the palate, the mild acidity and the fruity flavor of the Omachi rice and brown sugar rush in.
As you swallow, the sweet, spicy and acidic flavors come together to create a pleasantly crisp finish.
In the aftertaste, the umami and sourness give a feeling of sake.
Overall, it is a wonderfully balanced sake with a strong umami flavor that does not tire the drinker.
The sake brewer said that he aimed for a place where people would not get tired of drinking it.
The only thing is that it has 18% alcohol, so you'll be in a good mood before you know it, so be careful there! LOL!
