Since we've had two posts in a row of drinking alcohol that is so unlike our family, I'm going to continue with another oddity 🤣.
It's Otters' Dragon's Gate 😀.
This is also a sake that we bought when we visited the brewery.
What's so unusual about it is that Otters have been trying to reproduce the taste of their sake without having a toji (master brewer), but as a challenge, a pair of young brewers went through the whole process of making the sake from washing the rice to the top of the tank and made this sake expressing what they think is Otters' style 😀.
The head brewer, who happens to be a good friend of mine, told me that he would not release any sake that did not pass his check 😅.
This time Mr. Hori and Mr. Yamaguchi expressed themselves Otters😇.
From the attack to the mid-palate, it had the same Otters' nuance as usual, but the usual Otters' sweet and umami taste lasted for a certain length of time and then snapped, whereas this one seemed to fade out gradually 😇.
Which one is better is a matter of taste, but that's the only difference I felt 🤣.
I thought it was wonderful that young brewers are growing up like this😇.
