It's still early in the week, so today is calm.
First, we went to Jinya.
It is a little cloudy. It has a little bit of sweetness and is refreshing.
It is delicious.
Jinya was introduced together with "Tora Makkoli" on the TV program "Sake ni Koukaba" in which Yu Kamio appears.
Tora Makgeolli is a rare pure rice nigori sake made in the prefecture using sake production technology. It is hard to find.
The name "Tora Makkoli" is believed to have been derived from the name of the "Jinya," an enclave of the Echigo Takata clan, where the residence of the local deputy was located.
It is said that the sake used to be offered to Edo (present-day Tokyo).
The label is decorated with the family crest of the Echigo Takata clan, which is very much like a dedicated sake.
The brewing water is medium-hard, which is rare in the prefecture, to give the sake its sharpness.
The "Sakekasu Cracker" made with sake lees from a nearby confectionery, Sakamoto Sohonten, is said to be a perfect match for Jinya.
