Tobiroki Junmai Daiginjo Namazume
It has been a long time since I have had a bottle of Tobiroki, and I don't even remember when I last had one.
It is the first time for me to drink Junmai Daiginjo, and the taste, umami, and acidity of Tobiroki's sake spread in a good balance in my mouth. The umami that lingers on the tongue after it goes down the throat and the clean, elegant sweetness that lingers in the aftertaste, I felt that this was a Daiginjo's skill.
I usually do not drink much Daiginjo because I prefer to taste the individuality of each sake more directly and strongly, but I realized once again that it is good to drink Daiginjo once in a while.
