Jikin Junmai Daiginjo Nabari.
This is the flagship of Jikin, made from Yamadanishiki grown by contract farmers in Nabari, Mie Prefecture, the home of Kiyamasa Shuzo.
Mie Prefecture has a reputation for its terroir, ranking 13th in terms of production but 3rd in terms of the percentage of premium rice in Japan.
The blue and shiny Nabari characters on the bottle are stylish!
The nose has a melon and strawberry-like nuance, and the palate is surprised by its smooth, clear texture without any cloying taste.
The elegant sweetness of Yamada-Nishiki is brought out to the fullest. The impression of a well-defined flavor is due to the solid structure of the umami. The beautiful acidity and the astringent bitterness typical of Jikkoman give it a sharp edge.
The taste is extremely complete and well-balanced, and is wonderful!
