It has been a long time since I have had Yamada-Nishiki from Sansho.
I like both Hozu and Kako because they each have their own unique flavor, but I think I like Yamadanishiki the best!
It is gorgeous, well-balanced, and genuinely delicious!
I thought this Gononozo was a little lighter than the other two. The absence of pesticides and fertilizers may have had an effect on this sake.
The sake is brewed in wooden vats, and I used to feel the woodiness of the vats quite a bit, but this one has no woodiness at all.
However, this one does not have that much woodiness and has a refined feel.
I am looking forward to more and more delicious SANDO from now on.
