The "passion red" on the far left and the "cool blue" in the center have the exact same rice, water, and polish, but they have completely different tastes depending on whether they are made with a "sake yeast" or a "fast brewing" process. They are fraternal twins. Two different people with the same beauty👫.
The 🩷 of passion is the sweetness of the rice and the mild acidity. A lovely peachy taste with a jellied feel. It's like a Dior gloss. This one is a sake yeast yeast. It's delicious!
The cold sake 🩵 smells like Shaoxing sake. When you put it in your mouth, it has a strong sour and umami taste, and saliva flows out from the back of your jaw. This is a fast brew!
I was surprised at how different it is!
