Yamahai, directly pumped, Sake degree +12... I was curious about all these things, so I got it when I went shopping!

The mouthfeel is sharp, yet has a sharp, sharp, spicy acidity from the Yamahai process, which gives it a great punch. The deep, rich flavor and aroma is like fermented seasonings, tea leaves, and green bamboo. Rich flavor like freshly cooked rice. However, the sharpness is consistently healthy, so the taste is well balanced and delicious without being too heavy!
An excellent combination of umami and sharpness. It is really deep..!
Like "Oroku", I would like to keep this as a sake to be drunk slowly and carefully.
I am sure I will pick it up again next year!
