In Yamanashi, I was at a small cafe-like izakaya (Japanese-style pub) with a good reputation for hoto, and asked "Which sake goes well with hoto?" The owner said, "This is a sake brewery that doesn't advertise itself like Shichiken. The owner said, "This is a sake brewery that doesn't advertise like Shichiken, but I think this is the best sake on draft. I think it's the best sake. It really goes well with the homemade miso Houtou. It has a good balance of rice flavor and a slightly fruity aftertaste. I would like to try other kinds. I heard it is read as "Shun-no-uten", but I can't read it without furigana 😁.
