I started with a cold sake.
It was dry and refreshing, and went down smoothly...but there was a distinctive bitter taste in my throat, which I might not like 🧐...like I was drinking shochu when I was supposed to be drinking sake?
I was cold when I was drinking it. The bitterness comes to the fore ...... is this surprising? I don't have the vocabulary to describe this flavor, but it has a kind of herbal bitterness. Bitterness can have a negative aftertaste, but when it comes to the front, it has a delicious herbal liquor or coffee-like flavor.
Maybe it is because I served it cold, or maybe it is because it was exposed to air...at any rate, I liked it better cold than cold sake.
