The "Kimoto Organic Yamadanishiki," which is now in its second year, is also a wonderful example of this technique, and the wonderful acidity typical of Jikin has reached an even higher level with the addition of natural strength through the "Namahashi-style brewing process.
Organic cultivation gives the rice a more natural sweetness and expresses the flavor well. The wonderful flavor of the rice is complemented by the acidity of the "Namahashtoshikomi" and you will feel it spreading deep into the body in three stages, carefully harmonized with each other.
