Nabari City, Mie Prefecture. Kiyamasa Sake Brewery Co. Jikin Junmai Ginjo Hachitan Nishiki Hi-ire This is a fire-brewed Jikin that has been sitting for about six months. I haven't been able to get a bottle this season, and I hope I can find it once in a lifetime without chasing after it too much. We will drink it cold. There was a short gas sound when the bottle was opened, but no bubbles adhered to the glass. The color is clear and colorless. The top aroma is mild but slightly sweet, like pineapple. The mouthfeel is slightly gassy with a slight chilliness as it is fired. The nose has a hint of ripe fruitiness. In the mouth, there is a juicy sweetness with a hint of minerality, and just before swallowing, a sharp acidity spreads and harmonizes elegantly. It has a solid sweet and acidic image. After swallowing, there is a slight bitterness, which gives the wine a crisp finish. It is also good as a food sake. Ingredients:Rice(domestic),Rice malt(domestic) Ingredient Rice:100% Hachitan-Nishiki produced in Hiroshima Prefecture Polishing ratio: 55 Alcohol content: 15.5%.
