We wanted to make a summer sake, so we made this unfiltered, unpasteurized sake.
It's a 2020 BY, so the alcohol content is a little high at 17 degrees.
We thought it would be sweet because it's unfiltered, but it's been aged for a year, so it's a little heavier and has a good balance.
The end of the rainy season is just around the corner.
I'll consume it one by one 😉.
