Okayama Prefecture. Asakuchi City. Kabishin Brewery Co. Fish in the Shade of Trees. Merry Christmas, so this sake is like a white wine. When I tasted this sake before, I was told that it was made 30 years ago and nobody paid any attention to it, but now it is selling so fast that they can't produce it in time. Purchased at Ya Fat Ya. The label gives the impression of a white wine. We had it cold. When the bottle is opened, there is a short, faint gas sound. The color is clear, bright and yellow. The nose has a slightly sour yogurt aroma that stimulates the nose, and a slight apricot aroma. The palate is apricot, with sweet and sour acidity stimulating the tongue. The moment it leaves the nose, the acidity derived from rice spreads. In the mid-palate, there is a honey-like sweetness. The acidity lingers in the aftertaste. I think it is made from rice, Akebono. It was light drinking with low alcohol and fruity. Ingredients: rice (domestic), rice koji (domestic) Alcohol content: 8.5
