We are in the midst of a new sake season, and this is my first sake. I bought this sake because I thought it was a little dry and the rice used was Hachitan-Nishiki. Of course, I had already checked the information in advance at Sake-no-wa.
Perhaps because it is a nama-shu, it has a fresher aroma than I expected. However, it is not gorgeous, but very subdued. If I were to use an elegant analogy, I would say that it is modest.
Like the aroma, a gentle sweetness spreads in the mouth, but it is quickly followed by sourness and bitterness. The spiciness comes at the end and quickly fades away. Only the spiciness lingers in the aftertaste. I think it is very good as a food sake.
It is especially good with Japanese food in general. It does not require any accompaniments.
