This is a test brew by one of my favorite toji, Chikara Urasato. This year, too, it is a test brew by one of my favorite Tôji, Chikara Urasato! How about its evolution, deepening, and true value: ☺️ For more information about this sake, anyway, please read Mr. Chikara Urasato's X post: 🙇‍♂️🙇 □Opening day one... 🍶□□ The appearance is a slightly pale yellow, gold crystal, and after pouring, the sake cup is filled with fine gas bubbles🫧 after some time. The aroma is slightly youthful, gorgeous and fresh with a fresh, raw feel. Aromas of white grapes, strawberries, young yellow grapefruit, and young green-fleshed melon. Fresh, youthful yogurt, sour cream, and cheese aromas with a hint of acidity. The riceiness is about the size of a white egg dumpling. Moderately juicy sweetness. The acidity has a gentle, sake-like quality, including a pleasant gas kick. The crisp umami spreads to the end with a hint of bitterness. The finish is sharp, with a medium aftertaste of slight bitterness and a more subdued astringency. □Opened 7 days... 🍶□□ No major change in basic aroma or taste, with the impression of dairy and acidity coming forward. Almost no bitterness or astringency. The taste was cohesive, but the raw yeastiness came out strongly. The cheese sauce of the nachos went well with it. The aroma and flavor intensity without feeling the low alcohol was quintessential!

Hi Aladdin 🐦. I was nodding my head when I read your excellent review 😆 I had a different impression when I drank Kanji no Urasato the other day, and I see it was a test brew 🤔 It still tastes very perfect!
