There was a blind tasting of five different rice varieties of Kaiun, so I drank some Kaiun to prepare for the event.
First, let's start with Yamadaho.
Rice polishing ratio 55%, Sake degree +1, Acidity 1.4, Amino acidity 0.9
Alcohol 17.2
Bitter with a bit of nuttiness.
A bit of a western taste towards the end...
